Cooking: Winter Soup
I have been eating so much during the festive season that I feel I need to go back to a healthy diet. There is no better way to kick start it with this vegetables soup. I got the recipe from my grandfather a few years ago. It’s easy, quick and it tastes amazing. I hope you will enjoy it as much as I do.
Preparation: 10 minutes Cooking: 20 minutes
Ingredients:
2 leeks
7 carrots
7 potatoes
3 onions
2 bouillon cubes
3 celery sticks
2l of water
salt and pepper
1 table spoon of olive oil
1 clove of garlic
How to make this soup:
First peel the carrots, potatoes, onions and garlic. Then slice all the vegetables into thin rounds.
Put the vegetables in a casserole with the olive oil, salt and pepper and let it stir for a minute. Then add the bouillon cubes, garlic and cover the vegetables with water. Cover and simmer for about 20 minutes over a medium heat.
Once the vegetables have been boiled, blend the soup.
You can serve the soup with some crème fraîche.
