Cooking: Winter Soup

I have been eating so much during the festive season that I feel I need to go back to a healthy diet. There is no better way to kick start it with this vegetables soup. I got the recipe from my grandfather a few years ago. It’s easy, quick and it tastes amazing. I hope you will enjoy it as much as I do.

Preparation: 10 minutes Cooking: 20 minutes

Ingredients:

2 leeks

7 carrots

7 potatoes

3 onions

2 bouillon cubes

3 celery sticks

2l of water

salt and pepper

1 table spoon of olive oil

1 clove of garlic

How to make this soup:

First peel the carrots, potatoes, onions and garlic. Then slice all the vegetables into thin rounds.

Put the vegetables in a casserole with the olive oil, salt and pepper and let it stir for a minute. Then add the bouillon cubes, garlic and cover the vegetables with water. Cover and simmer for about 20 minutes over a medium heat.

Once the vegetables have been boiled, blend the soup.

You can serve the soup with some crème fraîche.

Home Decoration

I have been shopping and unpacking a lot the last few weeks and I can say that it is starting to feel like home. When we moved I ordered the below letters as a home present from this website. They are made from mango wood and are only £12.95. I think they are great and could also be bought as a wedding present.

Happy New Year

Yesterday the husband and I had a great time celebrating the new year in the Danish way. Unfortunately I forgot my camera so I don’t have much to share with you. 2012 has been a very busy year for me with passing my driving license, organised my wedding and a moving to Denmark. The new year means for me new resolutions like eating healthier, do more exercise, try to update my journal more often and try to visit my family more often too. What are yours new year resolution?

 

 

H&M Sales

Yeah! I have discovered that there is an H&M in the town we have moved in! I haven’t been shopping there for a while but I had a look today and luckily the sales had started. I found some great things and made a real bargain: 2 beautiful jumpers and a black snood for 250kr or £25. Not bad no?

The Library – “The Paris Wife” Paula McLain

Today I am recovering of 3 days of eating, drinking and partying. Nothing better than staying home warm with a good book and a cup of coffee. I got receive this book from my best friend as my Christmas present. The Paris wife is a novel about the love affair between Ernest Hemingway and his wife Hadley. This is a very interesting portrayal of not just their relationship, but also the community and lifestyle of the artists living in Paris during the 1920s.

Under the tree

After a successful Christmas eve dinner, I woke up to find out some very nice presents under the tree. I am so in love with my new bag The Paraty by Chloé. I can’t wait to take it out. What was in your stocking this morning?

Chistmas Dinner Sneak Peek

My family arrived yesterday from France. As I wanted to spend time with them and not too much time in the kitchen, tonight we are having a non traditional Christmas Dinner. I have prepared a raclette which is a Swiss dish based on melted cheese. What are your plans? Are you cooking a traditional Christmas Dinner? I hope you are having a fantastic family time.

 

White Christmas

It’s snowing since last night and this morning I took the opportunity to go for a walk and take some fresh air. We will definitely have a white Christmas here in Denmark.
